Ingredients
- 4 slices ciabatta or any other quality bread, about 1cm thick
- 200 g cherry tomatoes quartered
- 2-3 Tbsp extra virgin olive oil extra for drizzling if you want
- 6-8 leaves fresh basil rolled up and then sliced thin
- 1/2 tsp balsamic vinegar
- sea salt to taste
- cracked black pepper to taste
- 1 clove garlic sliced in half length-ways

Instructions
- Heat a griddle pan and toast the bread for 5-10 minutes or until crispy. You could just use a toaster, but the seared lines the griddle pan gives really adds to the flavour. I like to drizzle olive oil over the bread first, but that's completely optional (but very good!)
